Matt Kershaw, the Executive Chef for Hamilton restaurant group The Other Bird, wants to serve you incredible food, but hopes you’ll leave the tux and cocktail dress at home. Matt is a formally trained chef with a culinary background steeped in Michelin stars and haute cuisine, but he ditches fine-dining pretentiousness in favour of a downright comfortable experience. Think black-tie food, laid-back atmosphere.
Upon the completion of his apprenticeship at the Royal York Hotel in Toronto, Matt’s taste for fine-dining led him to work at acclaimed Toronto dining destination Canoe before enjoying stints at respected restaurants across Europe — including Michelin-starred Harvey’s in Bristol, England — and at the prestigious St. Andrew’s Links in Scotland. He also served as chef de cuisine at the Hamilton Golf and Country Club, where he revamped the menu to modern standards.
Armed with an enviable culinary resume, Matt opened the doors to his own restaurant in 2010 — Burlington, Ontario’s highly touted The Alex. The 30-seat restaurant was launched with a focus on small, shareable plates and the chef’s belief that high-end culinary creations are best enjoyed in a comfortable, relaxed atmosphere.
Two years later, Matt and his partner Erin Dunham opened Rapscallion Rogue Eatery, a restaurant that has helped transform Hamilton’s restaurant landscape. Its mantra is simple: love meat.
No stranger to culinary TV competitions, Matt won the Food Network’s Chopped Canada in 2016 and Fire Masters in 2020. Both times, showcasing his lifelong love affair with meat.
Today, as The Other Bird’s Executive Chef, Matt oversees menus that have established the group’s locations at the forefront of Hamilton’s restaurant revolution. Each unique restaurant encourages diners to explore high-end cuisine in low-key surroundings, challenging preconceived notions of “fine dining”. Matt creates menus intended to open guests’ minds to new experiences by offering up both challenging dishes and comfort food under the broad theme of “big flavour, probably bad for you.”
“We are not just trying to fill their belly; we are trying to give them a really fascinating dining experience,” Matt says. Although, you might just get both.
